Step-by-Step Instructions

1. Preparing the Watermelon Tuna

To begin, start with a medium-sized watermelon. Slice it into cubes, mimicking the size and shape of traditional tuna sashimi. Lay the cubes on a baking tray lined with parchment paper. Preheat your oven to 350F (175C).

In a bowl, mix together soy sauce, rice vinegar, and sesame oil. This mixture will serve as the marinade. Coat each watermelon cube in the marinade, making sure they absorb the flavors. Bake in the preheated oven for approximately 45 minutes. This will give the watermelon a tender, almost sashimi-like texture.

2. Cooking the Sushi Rice

Next, prepare the sushi rice. Rinse 2 cups of sushi rice under cold water using a strainer to remove excess starch, then cook it with the help of a Rice Cooker. Once cooked, transfer the rice to a large bowl and gently fold in rice vinegar.

While the rice cools, prepare your rolling station with a cutting board, sushi knife, and a bamb!

3. Assembling the Sushi Rolls

Place a sheet of nori on your sushi mat. Spread a layer of cooled sushi rice over the nori, leaving a small border at the top edge. Arrange a row of watermelon tuna, avocado slices, and cucumber along the lower third of the rice.

Using your sushi mat, carefully roll the nori and its contents into a tight cylinder. Moisten the border to seal the roll. Once sealed, use a sharp sushi knife to slice the roll into even pieces.
